Melinda's Meals 11/12-11/18

Believe it or not, my total grocery bill this week was only $32! Who said eating healthy had to be expensive?!

Monday / Wednesday / Friday:

Breakfast: 1 egg, scrambled with MorningStar Farms Chipotle Black Bean Crumbles
Lunch: Salsa Chicken with Cauliflower Rice
Dinner: Penne with Lean Sweet Italian Turkey Sausage + tomatoes and basil

Tuesday / Thursday: 

Breakfast: Yogurt & Peanut Butter
Lunch: White Bean Chicken Chili (not the recipe I use but close enough!)
Dinner: Indian Lentils with Coconut and Chicken Vindaloo (will post recipe)

Saturday / Sunday: 

Breakfast: 1 egg, scrambled with MorningStar Farms Chipotle Black Bean Crumbles
Lunch: White Bean Chicken Chili
Dinner: Chicken In Mustard Sauce

Easy Meal Planning

If you have followed me on social media for the past 3 or so years, you will know I am all about cooking healthy foods. My obsession started when I joined (the down defunct) FitOrbit, an online personal training platform. My FitOrbit trainer (Amanda Dale) would give me weekly fitness and nutrition plans. This taught me so much about calorie counting, the importance of measuring out ingredients (not guesstimating), and healthy alternatives to not so healthy guilty pleasure foods.
